Recipe: Bandeja Paisa from Colombia

The recipe mentioned in the community newspaper of June 2016 is a dish that is typical for the Antiochian kitchen. It serves 6 hearty eaters.

600 gr. (canned) kidney beans
2 spoonfuls of olive oil
900 gr.  minced beef
900 gr. rasher of bacon
6 chorizo sausages
6 eggs
3 avocadoes
3 baking bananas
450 gr. Basmati rice
about 100 gr. Hogao (= mixture of 4 tomatoes, 1 onion, 1 teaspoon of ground cummin, 3 spoonfuls of vegetable oil to fry this mixture in for 10 minutes)

Cut the avocadoes in two and remove the stone.
Prepare and fry the Hogao mixture.
Peel the bananas and cut them in long slices.

Heat the oil and fry the minced beef loose; add half of the Hogao, stirr well.
In another pan fry the bacon until it is crispy.
Fry the chorizo sausages.

Cook the rice dry (1 part rice with 1 ½ part water)
Heat the beans and add the rest of the Hogao, heat it all for about 10 minutes.
Fry the eggs and the sliced bananas.

Serve on 6 preheated plates:
the rice, covered with the beans with Hogao, bacon, sausages, half an avocado, sliced banana and fried eggs.
A good glass of wine and … enjoy your meal!
